Easy Stovetop Honey Granola

My new favorite method for making granola

Using a skillet to make granola is such a game changer! It’s quick, it’s easy, and it makes the house smell like fresh-baked cookies (huge bonus). Not having to wait for the oven to preheat means that I can just decide on a whim to make a quick batch of granola to have on-hand for an easy light breakfast or snack for the family!

Ingredients:

  • Old Fashioned Oats (2 ½ cups)
  • Honey (¼ cup)
  • Brown Sugar (1 tbsp)
  • Vanilla Extract (1 tsp)
  • Coconut Oil (1 tbsp)

Instructions:

Melt coconut oil in a large skillet over medium heat.

Add oats and stir to coat with oil. Cook for 5 minutes until light golden brown then move the oats to a large sheet pan (I like to line the pan with parchment paper so it’s easier to transfer it back to the pan later).

Add the honey, brown sugar, and vanilla extract to the pan. Stir constantly until it starts bubbling, then add the oats back in the pan. Stir to fully coat the oats and cook for 5-8 minutes, stirring constantly.

Transfer back to sheet pan, spread out into flat layer and let cool for 10 minutes. Once cooled, break it up and store it in an airtight container.
