Mexican Corn Chowder Recipe

I love a good soup and of course, being a lifetime Rhode Islander, I love chowder. This corn chowder isn’t quite the same as a classic New England Clam chowder, but it is packed with just as much flavor, maybe even more! With the optional toppings of feta and hot sauce, this has quickly become one of my favorite things to make for dinner when I’m craving something bold and delicious.

Let’s make some Mexican Corn Chowder!

Ingredients:

  • Red Bell Pepper (1 Large)
  • Vegetable Broth (6 cups) (I use Better Than Bullion Vegetable Base mixed w/ water.)
  • Yukon Gold Potatoes (2 cups peeled & diced)
  • Celery (2 Stalks)
  • Frozen Sweet Corn (2 bags)
  • Garlic (2 cloves)
  • Milk (2 cups)
  • Butter (2 tbsp)
  • Flour (2 tbsp)
  • Lime Juice (3 tbsp)
  • Extra Virgin Olive Oil (1 tbsp)
  • Tajin (1 tsp)
  • Onion Powder (1 tsp)
  • Fresh Cilantro (1 bunch chopped)
  • Salt + Pepper
  • Hot Sauce (optional) (Cholula is queen in our house)
  • Feta (optional)

Instructions:

Dice potatoes, bell pepper, and celery. Heat olive oil in pan and add potatoes, bell pepper, and celery. Cook for 5 minutes stirring constantly. Add garlic and lime juice and cook for another minute.

Add butter and when melted, add flour. Stir everything until coated. Cook for another 2-3 minutes, continuing to stir. Add Vegetable broth one cup at a time while stirring a bit in between each cup.

When all of the vegetable broth has been added, slowly add milk. Add sweet corn, chopped cilantro, tajin, onion powder, and salt + pepper to taste. Simmer for 15-20 minutes until potatoes are soft, (turn temperature down if it starts to boil, keep it at a gently bubbling simmer), top with feta and/or hot sauce and serve!
